Tagine (Morocco)

Tagine is a traditional stew cooked in an earthenware pot. It brings together savory meats and sweet dried fruits in a slow-simmered embrace.

Recipe (Chicken & Olive Tagine):
Ingredients:

  • 1 whole chicken, cut into pieces

  • 1 onion, sliced

  • 2 preserved lemons, quartered

  • 1 cup green olives

  • 1 tsp ginger, turmeric, paprika

  • Chopped cilantro

  • Salt, pepper, olive oil

Instructions:

  1. Rub chicken with spices. In a tagine or pot, sauté onions and chicken in oil.

  2. Add preserved lemons and olives. Cover and cook for 1 hour.

  3. Garnish with cilantro and serve with bread.
