Moi Moi (Nigeria)

Ingredients:

  • 2 cups peeled beans

  • 1 red bell pepper

  • 1 onion

  • 1 scotch bonnet

  • 1/4 cup vegetable oil

  • 1 tsp ground crayfish

  • Seasoning cubes and salt

  • Boiled eggs or sardines (optional)

Instructions:

  1. Blend beans, peppers, and onion into a smooth batter.

  2. Mix in oil, crayfish, seasoning, and salt.

  3. Pour into containers or banana leaves.

  4. Add boiled eggs or sardines inside each portion (optional).

  5. Steam for 45 minutes to 1 hour. Serve warm.
