A popular East African snack, mandazi is a slightly sweet fried doughnut with a hint of coconut and spice. It’s often eaten with tea, making it a cherished breakfast or evening treat in countries like Kenya, Tanzania, and Uganda.
Ingredients:
3 cups all-purpose flour
½ cup sugar
1 teaspoon baking powder
½ teaspoon ground cardamom
¾ cup coconut milk
1 egg
2 tablespoons butter or margarine, melted
Oil for deep frying
Instructions:
In a bowl, mix flour, sugar, baking powder, and cardamom.
Add egg, melted butter, and coconut milk. Mix and knead into a soft dough. Let it rest for 30 minutes.
Roll out dough on a floured surface to ½-inch thickness. Cut into triangles or desired shapes.
Heat oil in a deep pan. Fry mandazi in batches until golden brown and puffed (2–3 minutes per side). Drain on paper towels.
