Mahshi means “stuffed,” and in Egypt, it usually refers to zucchini, eggplants, or grape leaves filled with herbed rice.

Recipe (Stuffed Zucchini):
Ingredients:

  • 6 zucchini, hollowed

  • 1 cup rice

  • 1 tomato, grated

  • 1 onion, minced

  • 2 tbsp parsley, dill

  • Salt, pepper, allspice

  • Tomato sauce for cooking

Instructions:

  1. Mix rice with herbs, tomato, onion, and spices.

  2. Stuff each zucchini.

  3. Place in a pot, cover with tomato sauce, and simmer for 45 minutes.

  4. Serve warm.
