Peanut Soup (Senegal, Ghana)

Ingredients:

  • 1 cup smooth peanut butter

  • 3 tomatoes

  • 1 onion

  • 1 scotch bonnet

  • 1 lb chicken or beef

  • 1 tsp tomato paste

  • Seasoning and salt to taste

Instructions:

  1. Boil meat with salt, onion, and seasonings.

  2. Blend tomatoes and pepper. Add to meat.

  3. Add tomato paste and simmer.

  4. Stir in peanut butter diluted with hot water.

  5. Simmer until thick and creamy.

  6. Serve with rice or fufu.
