Translated as βgrilled meat,β Nyama Choma is a national treasure in Kenya. It is often served during social gatherings and is typically accompanied by ugali, kachumbari, and cold drinks. Goat meat is most popular, though beef or chicken can be used.
Ingredients:
1 kg goat meat (or beef), bone-in pieces
3 cloves garlic, minced
1 tablespoon fresh ginger, grated
Juice of 2 lemons
1 tablespoon chili flakes or fresh chilies (optional)
Salt to taste
2 tablespoons vegetable oil
Instructions:
Clean and pat dry the meat. In a bowl, mix garlic, ginger, lemon juice, oil, salt, and chili. Rub the marinade all over the meat and refrigerate for at least 2 hours or overnight for best flavor.
Preheat a charcoal grill or oven to medium-high heat.
Grill the meat slowly, turning occasionally and basting with remaining marinade or oil until the outside is nicely charred and the inside is tender (about 45 minutes to 1 hour).
Let the meat rest before chopping into bite-sized pieces.
