Couscous with Lamb and Vegetables (Morocco, Algeria, Tunisia)

Couscous is the pride of North African cuisine. Often served on Fridays or at celebrations, this dish brings families together with its fragrant spices and comforting textures.

Recipe:
Ingredients:

  • 500g lamb, cut into chunks

  • 2 cups couscous

  • 2 carrots, chopped

  • 2 zucchinis, chopped

  • 1 onion, chopped

  • 1 can chickpeas

  • 2 tsp cumin

  • 1 tsp ground coriander

  • Salt, pepper, olive oil

  • 1 liter vegetable or meat broth

Instructions:

  1. In a pot, sautΓ© onion and lamb in olive oil. Add spices and stir.

  2. Add vegetables, chickpeas, and broth. Simmer for 45 minutes.

  3. Steam couscous separately.

  4. Serve the stew over couscous.
