Harira (Morocco)

Harira is Morocco’s beloved soup, especially during Ramadan. It nourishes the body and soul, rich in legumes, herbs, and spices.

Recipe:
Ingredients:

  • 1 cup lentils

  • 1/2 cup chickpeas, soaked

  • 2 tomatoes, blended

  • 1 onion, chopped

  • 1/4 cup vermicelli

  • 2 tbsp tomato paste

  • 1/2 tsp turmeric, cinnamon, and ginger each

  • Chopped parsley and cilantro

  • Salt, pepper, olive oil

Instructions:

  1. Sauté onion in oil, add tomatoes, spices, and chickpeas.

  2. Add lentils, water, and simmer for 30 minutes.

  3. Add tomato paste and vermicelli. Cook for another 10 minutes.

  4. Finish with herbs and serve hot.
