Firfir is a hearty and spicy breakfast made by tearing up injera and stir-frying it in a richly spiced berbere sauce. It's a great way to use leftover injera and is deeply satisfying.
Ingredients:
2 pieces of injera, torn into small pieces
1 onion, finely chopped
2 tablespoons niter kibbeh
1 tablespoon berbere spice
2 cloves garlic, minced
1 tablespoon tomato paste
Salt to taste
Optional: shredded beef or lentils
Instructions:
In a pan, melt niter kibbeh and sauté onions until soft.
Add garlic, berbere, and tomato paste. Cook until thick and aromatic.
Add the torn injera and mix well, letting it absorb the sauce. Add a splash of water if too dry.
Cook for 5–7 minutes, stirring occasionally. Add beef or lentils for a protein boost.
Serving Suggestion:
Serve warm with a side of plain yogurt or a boiled egg. Best enjoyed with coffee or spiced tea.
