Egusi Soup (Nigeria)

Ingredients:

  • 2 cups ground melon seeds (egusi)

  • 1 cup palm oil

  • 1 lb assorted meat (beef, tripe, cow skin)

  • 2 cups chopped spinach or bitterleaf

  • 2 tsp ground crayfish

  • 2 seasoning cubes

  • 1 tsp ground pepper

  • 1 onion (blended)

  • Salt to taste

Instructions:

  1. Boil meat with seasoning till tender. Set aside with stock.

  2. In a separate pot, heat palm oil and fry blended onion for 2 mins.

  3. Add egusi and a little water to form a paste. Add to pot.

  4. Stir continuously to avoid burning. Let it cook for 10–15 mins.

  5. Add meat, stock, crayfish, pepper, and salt.

  6. Add vegetables and simmer for 5–10 mins.

  7. Serve with pounded yam, fufu, or eba.
