Waakye (Ghana)

Ingredients:

  • 2 cups rice

  • 1 cup black-eyed peas or red beans

  • 1 tsp baking soda

  • Waakye leaves (or dried sorghum stalks)

  • Salt to taste

Instructions:

  1. Cook beans till halfway done with waakye leaves and baking soda.

  2. Add rice and cook till both are tender.

  3. Serve with shito (black pepper sauce), boiled eggs, spaghetti, fried plantains, and stew.
