Tagine is a traditional stew cooked in an earthenware pot. It brings together savory meats and sweet dried fruits in a slow-simmered embrace.
Recipe (Chicken & Olive Tagine):
Ingredients:
1 whole chicken, cut into pieces
1 onion, sliced
2 preserved lemons, quartered
1 cup green olives
1 tsp ginger, turmeric, paprika
Chopped cilantro
Salt, pepper, olive oil
Instructions:
Rub chicken with spices. In a tagine or pot, sauté onions and chicken in oil.
Add preserved lemons and olives. Cover and cook for 1 hour.
Garnish with cilantro and serve with bread.
