Mechoui (Algeria, Morocco)

A festive roast, Mechoui is served at weddings and feasts. The lamb is cooked whole, seasoned simply, and melts in your mouth.

Recipe (Oven Version):
Ingredients:

  • 1 leg of lamb

  • 2 tbsp butter

  • 1 tsp cumin

  • Salt, pepper

Instructions:

  1. Rub lamb with butter, cumin, salt, and pepper.

  2. Roast in a hot oven (200Β°C) for 2 hours, basting occasionally.

  3. Serve with bread or couscous.
